If you’re vegan or vegetarian, I would say you’re missing out…but I don’t think you have to miss out. Just make this with tofu. You can have the same experience with a meatless twist.
Pressing the tofu to drain out some of the liquid, coating it in cornstarch and cooking it in a cast iron skillet with oil until it’s decently crispy is the key to being able to get it extra crunchy. It’s seriously so yummy. Extra saucy and perfect to serve over our brown rice version of sticky rice.
It’s not perfectly sticky, but it’s pretty close. It uses brown rice for extra fiber-y nutritive goodness and comes together in the Instant Pot in less than 30 minutes. Set it and forget it.
Go get you some of that take-out style Asian food goodness, but without all the additives and with a nutritious, vegan-friendly version.
