Best 3 Mini Pies Recipe

Have you ever seen anything so cute? I mean for real, these little guys are so tiny and adorable. They are perfect for a party, baby or bridal shower or having friends over for dessert. Little individual 3-bite pies are perfect because everyone can try a couple different kinds, free of guilt.

 

Three southern pies.

Three versions, only the most southern of pies:

  • Chocolate Chess Pie: creamy, rich, chocolatey. Kind of like a cross between a fudgy brownie and chocolate pudding.
  • Caramel-Apple Pie: apple slices, tons of warm and cozy spices and a drizzle of salted caramel.
  • Bourbon-Pecan Pie: nutty pecans, creamy filling and a bourbon-y kick.

 

Three major steps.

These babies were a big hit at the “Southern Gentleman” baby shower we threw for a friend recently. They got gobbled up, lickity split. And they are really pretty simple:

  • Step 1: Make the three fillings.
  • Step 2: Roll out store-bought, refrigerated pie crust to ¼ in. thick and cut with a circle cookie cutter.
  • Step 3: Grease a muffin tin, line each muffin cup with a pie crust circle, fill with filling and bake.

 

Cinnamon whipped cream??

Done. So easy. And while they’re baking, whip up some 5 minute cinnamon whipped cream and REALLY impress your friends.

These keep in the fridge for a few days so you can make them and then pull a few out when you have company over the next few days. Consider these your cute, tiny, super scrumptious last-minute hosting emergency desserts. Thank me later.

Bake the mess out of these 3 mini pies: chocolate chess pie, caramel apple pie & bourbon pecan pie with homemade cinnamon whipped cream and all the butter.

Yields36 Servings

 ***For all three pies you’ll use 2 packages of refrigerated pie crust plus for each of the three pies***
Ingredients – bourbon pecan pie
 1 c granulated sugar
 ¼ c butter, melted and cooled
 3 eggs, lightly beaten
 ⅓ c bourbon
 1 tsp vanilla
 ½ tsp salt
 1 ½ c pecan halves, lightly chopped
Ingredients – caramel apple pie
 2-3 apples
 ½ c granulated sugar
 2 Tbsp all-purpose flour
 2 tsp cinnamon
 ½ tsp allspice
 ½ tsp clove
 ½ tsp nutmeg
 1 c caramel syrup
Ingredients – chocolate chess pie
 1 egg
 ½ c evaporated milk
 ¾ tsp vanilla
 ¼ c butter, melted and cooled
 ¾ c granulated sugar
 ½ tsp salt
 2 Tbsp all-purpose flour
Ingredients – cinnamon whipped cream
 16 oz heavy cream, very cold
 ½ c powdered sugar
 ½ tsp vanilla
 2 tsp cinnamon

Directions – pie crust

Grease a muffin tin. Lightly flour your kitchen counter or any other clean surface and roll out the pie crust to ¼ inch thick. Using a 4 in round cookie cutter, cut circles out of the pie crust and lightly press them down into the cups of the muffin tin.

Beat together sugar and butter until incorporated. Add in the corn syrup, eggs, bourbon, vanilla and salt and beat 1-2 minutes or until thoroughly combined and pale in color. Fold in the pecans. Fill each pie crust lined muffin tin cup ⅔ of the way full with the mixture and bake at 350ºF for ~20 minutes or until crust is slightly browned and filling is set in the center. (The filling will fall once pies are cool.) Allow to cool in the pan for 5 minutes or until cool enough to remove. Carefully slide a fork, spoon or spatula underneath each mini pie and lift out to set on a cooling rack.

Peel and core apples. Then cut into thin slices (about ¼ in thick) and then cut each slice into thirds. Mix the sugar, flour and spices together in a bowl. Then sprinkle over the apple slices and toss to coat. Fill each pie crust lined muffin tin cup ⅔ of the way full with the mixture and bake at 350ºF for ~25-30 minutes or until crust is slightly browned and apples are cooked through. Allow to cool in the pan for 5 minutes or until cool enough to remove. Carefully slide a fork, spoon or spatula underneath each mini pie and lift out to set on a cooling rack.

Combine egg, evaporated milk, vanilla and butter in a bowl and beat until combined. Add the sugar, cocoa powder and salt and beat 1-2 minutes on medium speed. Add in the flour and beat until combined. Fill each pie crust lined muffin tin cup ⅔ of the way full with the mixture and bake at 350ºF for ~20 minutes or until crust is slightly browned and filling is set. Allow to cool in the pan for 5 minutes or until cool enough to remove. Carefully slide a fork, spoon or spatula underneath each mini pie and lift out to set on a cooling rack.

Add very cold cream to a bowl and whip with beaters or a stand mixer fitted with the whisk attachment until stiff peaks form. (Stiff peaks = the whipped cream holds its shape when you remove the beaters.) Add the powdered sugar, vanilla and cinnamon and beat just until combined. Serve with pies.
