Dark Chocolate Fudge and Almond Butter Energy Bite Truffles (Vegan, Paleo, Whole30)

Trying to eat healthy, but craving a slightly sweet treat that gives you a little energy boost AND keeps you on your healthy-living train? Look no further.

These little guys pack a big energy punch, taste delish and won’t throw off your healthy living streak.

And they’re so quick and easy to make. They come together in about a minute or two with a high-powered blender.

Not that you need another reason to run to your kitchen and make these immediately, but here you go – only 6 ingredients to whip them up.

You’ll also need a high powered blender or food processor. We love our Blendtec, but the Vitamix blender works great too.

For a more cost effective option, the Ninja blender should get the job done as well.

Why flax? According to healthline, flax has tons of fiber, omega-3 fatty acids and antioxidant-like phytonutrients called lignans. Not to mention being a moderate source of vitamin B1 and magnesium.

The key to getting that dark chocolate fudginess is using dark cocoa powder (aka dutch process that neutralizes the pH). Did you even know that was a thing? Well it is. And it’s delicious.

If you’re not a fan of dark chocolate, you could absolutely use regular cocoa powder instead (aka natural cocoa, the more acidic version). These are also delish with peanuts and peanut butter instead of the almonds and almond butter if that’s more of your thing.

I rolled my truffles in cocoa powder, but for an extra yummy spin, you could roll them in melted chocolate chips and allow them to cool.

These are easy to pop before a workout for a little boost without weighing you down. Grab on your way out the door when you’re short on time. Give yourself a healthy alternative when you’re craving something a little sweet.
