I feel like we’ve talked about this before, but I’m an equal opportunity soup eater.
I just love soup – condition don’t matter. Summer or winter. Warm or chilly. I will pretty much eat soup at any and all times.
HOWEVER, I will admit, there is something so, so comforting about warm soup on a cold, dreary night. Make this on a day when it’s cold and rainy (or snowy) outside and you’re guaranteed to feel warmed up from the inside out.

This recipe is completely plant-based.
According to healthline.com, lentils provide one of the best sources of plant-based protein at 17.9g per cooked cup and an excellent source of fiber. One cooked cup contains 15.6g fiber – that’s about half your daily recommended amount!

Thanks to one of our all-time favorite kitchen appliances, the Instant Pot, this meal should come together in less than 30 minutes total. And that includes the prep of chopping veggies.
5 minutes to chop veggies. 5-10 to sauté them. 5-10 for the Instant Pot to build up pressure. 10 minutes to cook. So doable for a quick and easy weeknight dinner for even the busiest of people.
Our Instant Pot obsession.
If you don’t know about our love affair with the Instant Pot, we use it for SO MUCH.
It’s a fool proof and easy way to make hard-to-get-right food perfectly every time (like hard boiled eggs and perfectly cooked rice). We use it almost weekly to make our favorite homemade greek yogurt (super cost effective and super yummy).
It can accelerate the cooking time of things you would normally slow cook all day or have to babysit on the stove for hours. For instance, our fave chicken and dumplings recipe. Plus you can sauté right in the Pot before throwing in the other ingredients (to save you on dishes).
It can double as a slow cooker if needed, cook cakes and baked goods (how in the heck?!) and even has a sterilize setting for things like baby bottles. And so much more that we haven’t explored yet. We feel like we’ve barely scratched the surface! You can see why it’s one of our most used kitchen gadgets.

Ok, back to the soup….
Healthy. Cheap. Easy. Not to mention this soup is warm and comforting. Savory and spicy. Earthy and creamy.
So. Freakin. Good. We like it as-is, dolloped with the coconut cream, sprinkled with chopped herbs and garnished with a little avocado. But this is super versatile.
You could serve it over rice or a baked potato. Or with some bread fresh from the oven or a grilled cheese sandwich for dipping. Totally delish any way you serve it.
