I’m not trying to complain. On the spectrum, my toddler eats really well. He’s (almost always) willing to try new foods and (usually) likes (some) things. But he’s still a toddler and still has random preferences.
Take scrambled eggs for instance. One day, they are his all-time favorite food and then the next day he will straight up refuse them. We’re talking pull them out of his mouth, scream and throw them on the floor. No idea.
We try to expose him to lots of different flavors, types of food and textures. But at the end of the day, sometimes he just wants what he wants. When I have lots of veggies to use up or when he’s on a picky streak and I need to sneak more veggies into his diet, these muffins are my go-to.
Recently we were heading out of town for over a week and I needed to get creative with a couple zucchini and some carrots hanging out in my fridge that surely would have been bad when we returned. I whipped up a batch of these muffins and we headed out of town to meet up with some friends (who also conveniently have little guys).
With 4 toddlers between 14-20 months, an entire batch of these muffins lasted all of 1 day. Those sweet boys DOMINATED these bad boys and left none for us adults.
The carrot adds natural sweetness, the zucchini and applesauce keep them moist, whole wheat flour and whole grain oats add fiber. These are packed with healthy ingredients you can feel good about giving your toddler. Or yourself. Whichever.
