Whole30 Jalapeño Poppers Recipe (Dairy-Free)

Whole30 Jalapeño Poppers Recipe (Dairy-Free)

Memorial Day is coming up and you know what that means: 3 day weekend, lake time, pool hangs, bonfires and of course a big grill out with your loved ones. I LOVE memorial day weekend. Partly because it’s the first official three-day weekend of spring/summer and partly because it’s finally warm enough down here in the Southeast to actually get in the water at the lake or pool instead of just stare at it (I may be in a wetsuit, but I’m ushering in summer, dangit!).

These jalapeño poppers are one of my favorite apps to bring to a Memorial Day get together and I’ll tell you why:

  1. They can be made ahead of time and kept in the fridge in a tupperware or wrapped in plastic wrap until ready to bake. (More time to get outside and enjoy your weekend).
  2. They can be eaten piping hot or room temp so if you bring them to a party, it’s ok if they don’t get eaten right out of the oven or off the grill (but they will… because they’re delish).
  3. They can be baked in your oven or grilled – perfect if you’re firing up the grill or just eating inside (blasphemy!). You can bake them at home and bring them, or bake/grill them at your host’s house.

Let me be honest for a second, I always hear people say to wear gloves when you cut hot peppers and I always think those people are being babies. I don’t know if I got an especially spicy batch of peppers this time or what, but I have washed my hands with soap approx 187 times since cutting these
jalapeño and my fingertips are STILL BURNING (who’s being the baby now?). So if you’re questioning whether or not to wear gloves while cutting hot peppers, my advice now would be “Please. Please just wear the gloves. It’s not worth losing the feeling in your fingertips. (Or your eyeballs when you rub your eyes hours later only to find that you still have capsaicin lingering on your hands).” Especially if you’re making a big ole batch of these puppies. I digress…

Maybe to you, Mem Day weekend is the same as any other. Maybe you even have to work. Maybe it’s still cold where you are (gasp!). Whether you’re a Mem Day lover or a Mem Day “meh”-er, I hope you make these because they’re the best appetizer for Memorial Day. Or for 4th of July. Or for Labor Day. Or for just like… Tuesday… ?

But seriously, what’s more American than jalapeños? Amirite? … Yeah… well, you know what I’m saying.

Do NOT do what I did. Hand-me-down cordless drill. Zero “how-to” tutorials or mentorship. Pseudo-masculine infused confidence (the reason all things break before warranty). 10 minutes worth of power per battery, maybe. The amperage to drill through some mean cardboard. Or to effortlessly predrill through […]
