Mocha Bundt Cake with Baileys Irish Cream Glaze Dessert Recipe

St. Patty’s Day is coming up, and you have NO idea what to bake for the occasion. It HAS to be creative and stand out somehow.

Well, your Pinterest dessert board is smothered with baked dessert recipes. But they’re not the most… exciting. Or mouth-watering. Or truly unique.

*Then in swoops a moist mocha cake dripping with a rich glaze of Baileys irish cream to the rescue.*


Baileys + Coffee

Baileys and coffee is such a classic combo.

I (Liz) am a self-proclaimed alcohol non-lover. Wine tastes nasty to me and beer smells like a foot in my opinion (Austin would vehemently disagree on both of these points). But put something sweet and dessert-y in front of me like rich coffee paired with creamy Baileys, and that is a whole different story.

But the moral of my beverage story is this: if you see me at a party and ask me what I want to drink and I refuse beer or wine and instead request water, don’t assume I’m pregnant. (You wouldn’t believe how many people jump to that conclusion.) But I rarely if ever turn down a Baileys and coffee. Oh, and the other moral of the story is that Baileys and coffee is exceptionally delicious.

And Baileys + coffee + chocolate. Forget about it.

You can absolutely use strongly brewed coffee for this cake, but we love the intensity of the coffee flavor you get by using espresso.

Sure you could buy a super fancy, electric espresso maker. But we our method of choice is using a moka pot (stovetop espresso maker). We love ours. It makes the process super easy. But don’t forget about the ~$30 Aeropress Coffee & Espresso Maker for a “poor man’s” espresso. 


Don’t Punt the Bundt

Have y’all ever seen My Big Fat Greek Wedding? You know when the two families are about to meet for the first time, her big crazy Greek family and his super white-bread, boring family? And boring white-bread mama brings her little bundt cake to contribute to the massive feast-of-a-dinner and Greek mama keeps trying to pronounce the word bundt and can’t so she just settles on “cake”?

“Boo-nt? Bunkt?…. It’s a cake!”

And then they proceed to put out this little bundt cake and it’s really just a blip on the radar of the huge greek feast and no one cares about the sad bundt cake? Yeah, that’s basically the exact opposite of how you’re going to feel bringing this bundt cake to your next get together.

The response I’ve gotten from brining this baby to quite a few parties lately is usually “Uhhh… can we break into that now? We don’t have to wait for dessert, right?”
