We’re the type that like to cook dinner at home every night even in normal/non-pandemic life.
It’s cheaper and (usually) a healthier alternative to going out to eat. And it can be a quick, mostly hands-off process with the right tips and tricks.
Instant Pot & KitchenAid Stand Mixer
Two of my favorite kitchen appliances (no secret here) are my Instant Pot and my KitchenAid Stand Mixer.
The Instant Pot lets me:
- Cook dinner in a flash,
- make perfect hardboiled eggs in 5 minutes,
- craft creamy homemade yogurt easily,
- make perfectly cooked rice without burning or undercooking it (why is it SO hard to get it right on the stove top?!) among other things.
I use my KitchenAid Stand Mixer to:
- easily whip up all the baked treats,
- craft perfect pizza dough,
- knead bread dough for me,
- make whipped Dalgona coffee,
- make homemade pasta with the attachments,
- homemade ice cream,
- shred my chicken for me. It’s a total workhorse.
The ultimate Instant Pot + KitchenAid meal efficiency
One of my favorite tips is using the Instant Pot to cook multiple items for a meal back to back and using the Kitchen Aid Stand Mixer to shred chicken.
Cooking hack: let my favorite appliances do most of the heavy lifting for me.
The Instant Pot is one of our most used kitchen appliances because it can cook food quickly while also giving it that “slow cooked all day” taste. And your hands-on prep time is no more than with Crock Pot cooking.
Only 10-20 minutes hands-on
Here’s what we do to make a full Mexican feast in only a couple hours (only about 10-20 minutes total of that is hands on time).
As a bonus, if you have leftovers you can:
- Repurpose them as quesadillas for lunch the next day,
- filling for enchiladas for another dinner
- make breakfast burritos or any other combo your heart desires.
Whether you’re preparing your Mexican food feast for Cinco de Mayo, Taco Tuesday or a random Thursday dinner deliciousness, you’re sure to wow your friends and family with this full meal prepared with minimal effort.
Cheers to that! Here’s how to do it.
