Coconut Cake with Lavender-Vanilla Frosting Dessert Recipe

Coconut Cake with Lavender-Vanilla Frosting Dessert Recipe

You guys, is this not the prettiest little white cake you’ve ever seen?

Y’all know I love (and I really do mean LOVE) chocolate. But every now and then, I’m in the mood for a dessert that’s just a little more fresh and dainty and maybe makes you feel a little fancy.

Layers of coconut flavor.

This cake is a triple threat of coconut. The cake itself contains coconut extract and coconut milk and the outside features coconut flakes. All the praise hands.

Is there a spring-ier flavor than coconut? NOPE. Except maybe lavender? So floral and delicate. It’s the perfect pairing with this coconut cake.

This flavor combo basically begs you to usher in the warm spring weather.

The cake itself is only slightly sweet, but is BIG on coconut flavor. We love the juxtaposition of the less sweet cake with the sweeter lavender icing. So balanced. And bowl-lickingly delish.

The cake for the occasion.

This cake is a beautiful addition to your Easter table, or your next bridal or baby shower. But it’s also a little rustic and un-fussy and perfectly appropriate to make for a random dinner with friends.

This cake is also amazing if you’re someone who struggles to frost cakes in a way that makes them look beautiful. ‘Cause guess what – you’re basically throwing coconut flakes all over this one anyway. So frost to your messy little heart’s content, cover it in coconut and proudly display that beauty like the cake-boss you are.
