Chipotles are the smokiest of peppers. They are the bacon to boring ham. The backyard, charcoal-grilled burgers to stovetop cooked.
Feel free to smoke and dry your own peppers, whip up some adobo sauce from scratch and store the peppers to marinate in the sauce before diving in. Or you can pick up a can of chipotle peppers in adobo sauce at the grocery store for real-o-cheap and save yourself the unnecessary time and hassle.
There are many instances where I believe in making-from-scratch, cooking the old fashioned way and being with your food from original, just-picked-from-the-plant through finished-ingredient-in-meal. This is not one of those times. The insane flavor punch these smoky little babies pack and the convenience / affordability of buying them at the store make them a frequent item on our grocery list.
This is Austin’s favorite egg bake I’ve ever made. Which is saying a lot, ’cause the boy loves eggs, and I’ve been known to make way too many just the right amount of egg bakes.
This is a great recipe to feed a crowd for a special breakfast (or breakfast for dinner.) And it’s delicious leftover – warm it up or consume cold or room temp if you’re a cold pizza eater or just into that kind of thing. You can heat up a leftover slice for a quick weekday morning breakfast on the go. Need to throw it together quickly? Cook all the veggies and bacon and whisk up the egg mixtures. Store in separate containers in the fridge. When ready to cook, preheat the oven, grease the baking dish, add ingredients to the dish and pour egg mixture over the top. You’ll have it assembled before your oven is heated up.
It perfectly pairs with something sweet like cinnamon rolls, pancakes or coffee cake. Or as a complete meal on its own. Veggies, meat, eggs, a little smoky spice and some cilantro sour cream to top it off. Give me a break. (Sub out sour cream with our coconut milk dump ranch sauce to keep it paleo / whole30).
Also, this cilantro sour cream is probably the easiest thing in the world. Your friends will think you’re so fancy, but you’ll know the truth: you just stirred two ingredients together and called it a day. Chef-win!
