Bacon-Wrapped Fig-Glazed Chicken Thighs Recipe

I’ve been on a big fig kick lately. I’ve been combining fig with everything I can think of. I’m talking on grilled cheese, on pizza, glazing this bacon wrapped chicken. It’s all seriously drool-worthy.

And I mean, who ever hated anything wrapped in bacon? No one, that’s who. But this sweet and sticky fig sauce just takes it over the top. I mean if you want to, you could even leave out the chicken and just cook some bacon, pour the sauce over and let it reduce.

I won’t judge you.

I might actually join you.

The combo of sweet + salty is a classic favorite and this is no exception, but it takes it up a notch. Sweet, sticky fig glaze, salty and smoky bacon, peppery arugula. (Drooling all over again).

This is a super quick dinner. It comes together in about 30 minutes with no prep required. It looks kind of fancy. It tastes incredible. I would call that a win-win-win.
