I love grits. LOVE them. But y’all, I’m going to be straight up honest here…I don’t like shrimp. I know, “what’s wrong with you? How can you have grits without shrimp?” Truth time: even eating good seafood, at the beach, I still can’t get past the texture of shrimp. I feel like I have to chew it for a million years.
I digress… Do you love shrimp? AWESOME. You could replace the sausage in this recipe with shrimp and viola, a yummy cajun-spiced shrimp and grits bowl! But as for me? I’ll stick with my sausage, thanks!
The texture of the creamy grits paired with the charred exterior of the sausage and zucchini and the zing of the cajun spice blend. It’s a texture and flavor party in your mouth.
Could you replace the cauliflower “grits” with actual real-life grits? Sure. But if I can sneak in veggies instead of no nutrient-value white carbs, I consider that a win.
